Temperature control for my Oklahoma Joe Longhorn
Sep 5, 2012 · New2OkieJoe, I have the same smoker and it is a nice mid range smoker but has some flaws. the biggest is the amount of air leaks. The door, the firebox and the chimney all have rather gaping gaps. These need to be closed up as best you can.

Jun 21, 2017 · I've been doing a lot of reading about getting more heat through my joe highland, as the other night it felt like I loose a lot out the firebox end, so I decided the stack might not be drawing enough. After running the sizes of the highland through the smoker builder calculator I make the stack 200mm narrower than it should be.

Jul 6, 2019 · I purchased an Oklahoma Joe offset smoker. After cooking in it a few times I have found that controlling the temperature on a long smoke is very troublesome. I have done some mods to the smoker. I added gaskets, made a baffle for it, and added a charcoal basket. I can keep a constant temperature at 225 degrees for about three and a half hours.

The Oklahoma Joe Longhorn 3-1 is half propane grill, half smoker, with a side firebox and a side burner. The smoker cook chamber is approx 20" dia x 20" long, and the side firebox is approx 19 1/4" dia x 17" long.
