Jul 24, 2012 · I took a look at my Oklahoma Joe Longhorn Offset Side Firebox Smoker/Grill and realized that the air intake butterfly has a post/lever that could support a plenum, and all I would really need to build a plenum would be a 9" diameter and couple of inch deep stainless steel pie pan. I found one for $5.

About a week or two I smoked my first pork shoulder and st Louis ribs. Need some suggestions on how to keep fire going and how to raise temperature, which on my test run got to 225 to 250.

I have my fire box done (an old grill). I have my PID built for my gas control. I still have to weld my fire box on run a pipe between the firebox and smoker.

I ran out to save them and from just the little bit of rain that touched the Bradley bisquettes, they puffed up and completely fell apart. The homemade bisquettes were completely fine. The wood mixture consisted of hickory chips and black cherry pellets.
