Apr 30, 2018 · Hi there, everybody. Long-time meat smoker (on assorted cookers, most recently a cheap-but-effective Charbroil offset) and forum lurker, but now a member. Something I've long wanted to do, and have just started, is to build a brick smoker. So with about 1,000 bricks left over from a home addition, I decided to go after it.

Aug 16, 2012 · The spacing between shelves were, brick on side, brick layed flat. This is very time consuming. Its very important to keep everything level and square. When laying firebrick the thinner the mud joint the better. This isn't as important in a smoker as it would be in a fireplace. Some people would say to use fire clay.
Building a brick smoker, design phase, need help

Jan 8, 2013 · I am not a brick smoker guy, my smokers are of the steel variety, but I would imagine that the design could be something like this. Very bottom is fire place. Above that is the Pizza oven, but have it bricked so that no smoke comes in this chamber. Above that is the smoking chamber where you allow the smoke to be released and chimnyed out the top.

Apr 20, 2015 · Brick laying is just like any thing else. There is a system. Standard brick are on layoff of 16". Plain and simple. You can count brick and know how wide or long something is. You can count brick and get the specs without spending a dime. Standard brick lay 4" up, 8" out. Everything about laying standard brick works on 8 and 16in.

Aug 22, 2014 · Good luck with your build. I've been smoking food for years and find a brick smoker is the way to go. It takes about 3 hours to get mine up to temp because all those bricks take a while to get hot but once it is up to temp it doesn't move. I've smoked briskets for 20 hrs. and my smoker stayed exactly at 225 and never moved.

May 19, 2015 · I used 5500 PSI concrete mix with a combo of 1/2 inch and 3/8 inch rebar every 10 inches and 2 inches off the edges. I used the 1/2 rebar for the grid that will support the smoker because this is where the bulk of wieght will be. The smoker is 35x35 inches for the exterior (27.5x25 interior or close to that).

Apr 28, 2012 · I originally began with an idea for a reverse flow concrete block smoker, but after realizing how much steel was going to cost me, I altered my plan a bit. I really wanted to cook a hog the way I've seen it in a lot of other posts: in a big concrete block pit, but I also wanted ease of access to the fire and increased temperature stability.
