Nov 27, 2013 · I have the big chief and owned it for about 10 years and like the ease and consistancy of what it does. Simple to use...constant heat maxes out at about 160 deg.... during the summer, reasonable smoking times 6-8 hours. but in the fall and winter 8-12 hrs. yes the outside temp plays a role on total smoking time.

Aug 28, 2013 · Fresh fish is always best! Water expands when it freezes. Salmon flesh has lots of water in it. So, when you freeze it, the flesh is effected by the expanding water. The structure of the fish breaks down and this effects flavor. Properly frozen fish will still taste great (provided it was good to begin with) but not as great as fresh fish.
Do you have to "brine" salmon before smoking it?
Oct 12, 2010 · I have used a wet brine and dry brine. I like the simplicity of the dry brine, and it keeps the fish from falling apart as much. I think the brining also helps to let the fish turn out firmer. Be sure to rinse the filets and let sit on the counter for about an hour or so before going into the smoker.
